You know how people are always talking about how good unsweetened vanilla almond milk is? Always unsweetened they tell you. It's SO good. Well we tried it. We didn't love it. That was a while ago though and I thought I'd give it another chance. Except the commissary was out of unsweetened vanilla almond milk, so I bought sweetened instead. You guys. YOU GUYS. That's the stuff. AND it still has fewer calories than skim milk. I powered through a carton of it in no time.
You know what's even better? Sweetened vanilla almond milk on the rocks plus Kahlua. Run, don't walk.
Remember when I told you about overnight oats? Well, I'm still eating them every morning and I have two new favorite flavors to share with you.
For both of these, you're going to start with your basic recipe: 1/2 c oats, 1/2 milk, 1 T chia seeds, optional: splash of vanilla.
Then you can add blackberries and just a pinch of sugar! Yum!
OR my very favorite...
Add blueberries and the zest of 1/3 of a lemon. So, so delicious.
A lot of the things I cook involve lemon juice, so before I juice a lemon, I just zest it into three containers, stir in the rest of the stuff, and stick the containers in the fridge. I put all that lovely zest to good use and breakfast is made for three whole days. I've been using frozen berries, so I cut back on the milk a little since I get some liquid from the berries defrosting.
Other good stuff I've made recently includes this baked artichoke chicken (I subbed potatoes for mushrooms because potatoes are delicious and mushrooms are the devil), this penne rosa with shrimp (which was good the first time [mushrooms omitted] but so much better the next day that in the future I plan to make it ahead and serve reheated), and my favorite, these chicken parmesan meatloaf muffins. Those things are so good AND only 147 calories a pop. And all portion controlled for you.
Have you guys ever shopped at 6pm.com? They have free shipping both ways. And while I realize this doesn't apply to many of you, they get stuff to Okinawa so fast! Like, a week! That's even better than Amazon, which is our go-to since everyone else seems to take a month to get anything here.
They just started showing The Big C on AFN and I really like it. It was on Showtime, which I've never had and I think it's over now, but maybe you could get it on your Netflixes or your Hulu Tubes or on DVD at the library. The C in question is "cancer" in case you were concerned about what kind of show I was recommending to you. Laura Linney plays a very repressed high school teacher who gets diagnosed with stage 4 melanoma and starts living out loud, as they say.
I've also become enamored of The Big Bang Theory after getting Season 1 from our library and then watching reruns in the afternoons. If I can't get actual speds in my life, Sheldon will just have to do.
